I’m not sure about you, but I have eaten many versions of Zhu Bi Png so far, and never once were they the same. My grandparents have different backgrounds and heritage, thus it is natural that they will have their own take on Zhu Bi Png. If you didn’t know, Zhu Bi Png is a savoury glutinous rice dish, usually making an appearance during festive seasons like birthdays or Lunar New Year. It does take quite a bit of effort and time as the glutinous rice has to be pre-soaked overnight, and later steamed for an hour. So I always feel loved when my grandma surprises me with a bowl of her Zhu Bi Png.
In this month of celebrating our grandparents, we have met with Yi Ting (@yitinggoyt) and her grandma to share with us her recipe of Zhu Bi Png. She did mention that the pork can be substituted with other meat, but the former will definitely make the rice slightly more fragrant. Her version is slightly different from others as she likes to add in fried ginger as a garnish instead of the typical fried shallots. It definitely has its own uniqueness to it! Just like our grandparents like to say “agak-agak” when they cook, the measurements below are all estimated, so remember to taste as you go~

Ah Ma’s Recipe (rmb, it’s agaration…)
1/2kg glutinous rice
10 dried shitake mushrooms, soaked, sliced and drained
200g dried shrimps
1/2 (small) bowl ginger, shredded
8 Tbsp sesame oil
1/2kg pork belly
directions:
wash and soak the glutinous rice in water for at least 2 hours. Drain and set aside.
in a heated wok, add in sesame oil and fry the shredded ginger until golden brown. Remove for garnish later. Add in the chopped dried shrimp and stir-fry until fragrant.
add in the pork belly, pre-soaked mushrooms and stir-fry for five minutes. Mix well.
add glutinous rice and stir-fry for a few more minutes.
transfer the rice into a steaming pan and steam the rice for about 40 - 1 hour. Stir rice every 20mins, sprinkle some water if necessary. Steam until the rice is cooked.
remove the rice from the steamer and top with fried ginger and serve.
