i dont know about you, but im already counting down the days to Christmas!! since i am in that holiday spirit, i wanted to spice up my morning pancakes with some extra cute friends 🥹 i mean just look at them, dont they look soooo cuUUtee. all you need is a few extra ingredients from your usual pancakes, and you’ll be rewarded with this plate of santa pancakes!

Souffle Santa Pancakes Recipe
makes 2 big pancakes
2 egg whites
5g lemon juice
25g sugar
5g cornstarch
2 egg yolks (lightly beaten)
35g cake flour (sifted)
pinch of salt
15g milk
1 packet of whipping cream
1 tbsp of icing sugar, sifted (to taste)
strawberries
chocolate (melted)
directions
measure out all ingredients before starting as souffle pancakes are quite time sensitive!
whip the whipping cream till soft peaks forms, stir in icing sugar and set aside in the fridge
prepare the santa eyes by melting chocolate, and pipping small dots on a baking sheet, and chill
in a medium bowl, whisk together egg whites and lemon juice till it forms a foamy consistency. next, add in half of the sugar and whisk till it forms soft peaks, then whisk in the remaining sugar till it forms stiff peaks (when the peaks looks glossy and holds it shape well)
at this point, preheat your lightly oiled pan on medium low heat
using a whisk, stir in cornstarch (till there are no lumps) and egg yolks, ensuring that you don’t over mix!
gently fold in the cake flour with a spatula, until there is no lumps seen
lastly, pour in milk and mix well, dont over mix! transfer batter into a pipping bag/ ziplock bag/ or use an ice cream scoop
on the preheated pan, scoop/pipe to your desired size, pour in 1 tsp of water on 4 sides of the pan, and cover for 4 minutes
when pancakes looks slightly firm, add another dollop of batter ontop of the precooked pancakes, add in 1 tsp of water on 4 sides of the pan, and cover for another 3-4 minutes
before flipping, touch the sides of the pancakes, if it is dry, its ready to flip. if not, allow it to cook for another 2-3 minutes (covered). then, flip the pancakes and allow it to brown for about 3 minutes
assemble
slice the strawberries in half, fill it with whipping cream, 2 chocolate drops (for the eyes) and gently press the cream with with the other half of the strawberry
stack the pancakes, add as much cream as your heart desire, position the strawberry santas and dust it with some icing sugar
