This year, we had the privilege of cooking for a young delivery rider whose dream is to save up enough money for his mom’s umrah (im not crying, u are) – so we offered to make him a nostalgic Nasi goreng kampung for Iftar.

Nasi Goreng Kampung
sambal paste:
6 shallots, peeled
5 garlic cloves
8-10 red chillies
2 chilli padi (according to preference)
3 tablespoons dried anchovies (ikan bilis)
1 thumb-sized belacan, lightly toasted
4 cups cooked rice
3 tbsp light soy sauce
1 tbsp kecap manis
2 eggs, beaten
Salt, to taste
1/2 cup ikan bills, deep fried
1/4 cup oil
Directions:
Pound in a mortar or blend all the ingredients for the sambal paste. Set side.
Soak 3 tbsp ikan bills in water for 10 minutes. Pound it into a paste.
Heat oil in a wok or pan on medium heat. Fry the sambal while stirring, until the fragrant. This may take about 1-2 minutes
Increase the heat, and add in the beaten egg. Scramble into small pieces. Combine the cooked rice, soy sauce, kecap manis and stock cube.
Toss the rice well with all the ingredients until dry and the sambal is distributed evenly. Season with salt and sugar if required.
Serve and top with crispy ikan bills and a side of cucumbers.
