for the wings:
4 chicken wings, cut halves
1 garlic cloves, minced
1 tbsp onion powder
2 tsp dried parsley
1 tsp ground black pepper
2 tsp salt
1 tbsp plain flour
1 tbsp tapioca starch
2 tbsp oil
for ranch sauce:
150 ml full cream milk
2 tbsp vinegar
1 tbsp mayonnaise
1/2 tsp onion powder
1/4 tsp garlic powder
2 tsp dried parsley
Salt, to taste
for voodoo fries:
3 potatoes, cut into matchsticks
1 garlic clove, grated
2tsp Korea chilli flakes
1 tsp salt
2 tbsp oil
directions:
Marinade the chicken wings for at least 2 hours with all the ingredients except the flours and oil
Remove from fridge and coat with the flours. Arrange them in an air fryer, spray some oil and fry for 20 mins until crispy
In pan, heat butter until melted and add in all the hot sauce ingredients. simmer for 2 minutes. Once the chicken is fried, toss it in the hot sauce to evenly coat
Make buttermilk by stirring rice vinegar to milk and let is curdle for 20 mins. Take 3 tbsp buttermilk and put it in a bowl. Mix in the rest of the ingredients and adjust seasoning
Steam the potatoes, skin-on, for 10 minutes
Coat them with the rest of the seasoning and fry in an air fryer for 190 deg Celsius
Serve hot and still crispy.
