What’s more comforting than a bowl of fishcakes, soaked in a rich miso broth after a long, exhausting day?
In this episode of What Do You Want To Eat, Avvir, Singapore’s national team diver, requested for a bowl of oden, as it reminded him of the hard work he accomplished at the Fukuoka World Championships. He mentioned that Azfar’s version was ON PAR with what he enjoyed in Japan, so you can be rest assured that this recipe is legit. The highlight of this dish is said to be the tofu skin—the best at absorbing up the zhap. So if you are into that, remember to add more tau kee into your oden!

Oden Recipe
3 tbsp Shiro Dashi (Japanese Bonito Broth Base)
1 tbsp red miso paste
1 litre boiling water
2 tbsp mirin / mirin-style seasoning
1 medium-sized daikon radish, cubed
1 hardboiled egg, peeled
1 store-bought Oden set (400-600g)
300g konnyaku block, sliced
directions:
in a pot, combine the daikon radish with boiling water. Let it come up to a gentle simmer and add the shiro dashi.
dilute red miso in a bowl with 3 tbsp hot water and then add it to the oden broth together with mirin.
once the the radish becomes tender throughout, add the oden pieces, konnyaku and boiled egg. cover and simmer on low heat for 10 minutes.
season with salt if needed. serve hot alongside a small dollop of red miso on the side (optional).
