Ever heard of Khai Being? These deliciously seasoned eggs are baked in their shells, creating the perfect baskets for a light mid-day snack. Khai Being is a MUST TRY if you have a curious palette and want to explore the streets of Laos through food.
Pour your beaten egg mixture back into the egg shells and pop these babies into the oven for 3-4 hours. Yes, you heard that right! This recipe is NOT for the faint-hearted. But, these melt-in-your-mouth eggs are to die for and will be WORTH the wait.

Ingredients:
6 eggs
2 tbsp Thai oyster sauce
1 tbsp black pepper (or to your liking)
1 tsp sugar
2 tbsp thin soy sauce
1/2 cup of chopped spring onions (optional)
1 tsp MSG (optional)
Steps:
Empty out the eggs by tapping a hole at the top and slowly carving out a big enough hole that your egg can come out. You'll want to use a chopstick or skewer to break the egg membrane so it all comes out with ease. Once empty, wash the shells too.
Beat and strain your egg mixture to get rid of any shell, then combine all the ingredients.
Using something with a spout, slowly pour the egg mixture back into the egg shells.
Stick them on ideally cardboard egg trays so they stand up or foil. Bake at 130 degrees celsius for about 2-3 hours.
Once done, cool them down and dig in! This can also be eaten with sweet chili sauce.
