Here's a meal you can whip up any time you have a sinful craving but don't want to splurge!
Jollibee dupe recipe:
2 chicken drumsticks + 2 thighs
brine:
2 cups hot water
2 tbsp ground black pepper
2 tsp chicken seasoning powder
1 ts onion powder
2 garlic cloves, crushed
1 tbsp salt, to taste
seasoning flour:
1/2 cup plain flour
2 tbsp tapioca starch
2tsp ground black pepper
1 tsp chilli powder / paprika
1 tsp baking powder
1 tsp chicken seasoning powder
2 tsp salt
gravy:
1 tbsp crushed black pepper
2 bay leaves
1 red onion, diced
3 cloves garlic, crushed
1 tbsp light soy sauce
1 tsp dark soy sauce
2 cups water
2 tbsp butter
1.5 tbsp plain flour
Salt, to taste

spaghetti joy recipe:
250 g spaghetti, cooked to al dente
5 frankfurter hot dogs
1 red onion, diced
3 bay leaves
1/2 cup tomato ketchup
2 tbsp vinegar
1 tbsp sugar (or to preference)
1/2 chicken stock cube
1/3 cup water
1 tbsp oil
Salt, to taste
Directions:
Mix the brine ingredients well. Let the brine cool down to room temperature. Soak the chicken in the brine for at least 3 hours or up to overnight
Whisk together the seasoned flour ingredients. Take half of the flour and add just enough cold water until it becomes a thick batter
Heat pot of hot oil on medium heat. Drain the brine off the chicken and coat the chicken in the dry seasoned flour. Then, coat it in the batter and immediately fry in oil until golden and the inside is cooked. Drain on paper towels.
To make the gravy, melt butter in a pan. Add the black pepper, bay leaves and onion and sautee until translucent. Sprinkle in the flour and stir for 1 minute. Add water chicken stock cube and simmer and until it is dissolved.
Add the soy sauce and season to taste. Simmer for another 3 minutes and pass the gravy through a sieve to remove the solids.
For the spaghetti sauce, heat oil in a pan. Add in the onion and bay leaves and sauté till translucent. Add in the ketchup, vinegar, stock cube, and water and cook for 3 minutes.
Add in the hot dogs. Season the sauce with salt and sugar to taste.
To assemble, pour the spaghetti sauce onto the spaghetti and serve alongside the ‘Chickenjoy’ with a saucerful of gravy!
