How do you make Jokbal (족발) halal? If you have not jumped on the mukbang bandwagon, Jokbal is a Korean dish which consists of braised pig trotters- Wait what? How do you make pig trotters Halal? In our halal version of this recipe, the star of the show is beef shin! If you are craving for that soft, tender and fall-off-the-bone meat, you HAVE to try our halal version of jokbal.
For preparing
500g beef shin
*we also tested sheep feet & duck breast - you can substitute with equal portions of these, if you’d like.
1 tbsp toasted sesame seeds
Braising liquid:
5 cups water
1 chicken stock cube
1/2 cup halal mirin
1 cup light soy sauce
½ cup honey
¼ cup brown sugar
1 Tbsp instant coffee or espresso powder
1 large onion, halved
1 large apple, halved
2 inch ginger, sliced
4 spring onions, whole
3 tsp salt
Dried spices
2 tbsp black peppercorn
2 cinnamon sticks
5 cloves
3 dried chillies
3 bay leaves
Directions
Combine the braising liquid ingredients and spices together in a pot bring to a boil.
Simmer for 10 minutes before adding in the meat of choice. Cover and simmer on low heat for 2 hours or until the meat becomes tender (cooking times vary according to meat)
When meat is soft, fish it out and set aside on a plate. Strain braising liquid and discard the solids. Return the meat to the pot and reduce until the liquid turns into a tacky sauce which cling onto the meat.
Remove from heat and let it cool at room temperature. Keep in the fridge for at least 2 hours to firm up and slice to serve.
Serve on a platter with lettuce, perilla leaves (optional), pickled daikon, kimchi, saujeot and other Korean seasoned vegetables of choice.
