I was today years old when i found out that there are about 26 different types of biryani that existed !! i guess you can never get bored of biryanis.. here, we have The Pantry Boy teaching us how to make Dum Chicken Biryani, a recipe that you wont be able to find anywhere else, cuz he learnt it from his friend’s mother 😯 so the secrets out, you have to try this yourself!

Dum Chicken Biryani
for rice
2 cups basmati rice
2 litre water
1 tsp black cumin
1 piece bay leaf
1 piece cinnamon
3 piece cardamon
4 clove
for gravy
3 tbs Oil
2 red onion
1 star anise
3 pieces of cardamom
1 black cardamom
4 clove
1 piece of cinnamon
1⁄2 tsp caraway seed
1 bay leaf
1 tbsp ginger & garlic paste
600g chicken
salt to taste
2 tsp Biryani Masala
1 tsp red chili powder
2 green chillies
1 cup yoghurt
1 handful mint
1 handful coriander leaves
Saffron 1 pinch
2 tbsp milk
1 tbsp water
1 tbsp ghee
directions
in a pot, saute onions in oil until golden and even in color
while its cooking, marinate chicken with yoghurt, biryani spice, chili powder, and salt. give it a good mix
remove half of the onions and set aside. add cinnamon, black cardamon, bay leaf, star anise, green cardamom, cloves, caraway seeds and black cumin in the pot of remaining onions
lower the flame, and add ginger & garlic paste
add the marinated chicken in, fry on medium heat until half cooked, lower the heat and cook till a thick gravy forms
par cook rice in water and spice mix (cinnamon, bay leaf, clove) and cook for about 10 mins and strain
add in the strain rice on top of the curry, garnish with saffron milk, the reserved fried onions, 2 chilli, and cover. allow it to cook for 15 minutes at a low heat
