crispy corned beef with chilli Padi - an incredibly simple dish which evokes memories
corned beef may be mundane and boring but the chilli padi in this recipes gives it a delicious, devilish kick!
I don’t know about you but corned beef is on my list of the simple yet nostalgic foods I used to enjoy as teenager while eating TV dinners at home. On days after school while my parents were still at work, a delicious stir-fry dish of corned beef was a go-to for my brothers and I despite our mom telling us to not eat too much of it because of its high sodium content! Nevertheless, we sneaked our way to the dry cabinet and prepared it for ourselves every other week.
This food memory was long forgotten until recently, a delivery person we featured, requested for me to cook her late mom’s spicy corned beef stir-fry. While it may be one of the simplest dishes anyone could prepare, I realised how even the most menial dishes could have so much importance and meaning to someone.
For this recipe, I turned it up a notch by searing the resulting stir-fry with butter, for a more unctuous flavour and crispy crust. The corned beef, paired with the runny egg yolk, topped with a spoonful of warm rice was such a heavenly treat, I swear I could’ve gone for seconds!

Crispy Corned Beef with Chilli Padi
340g canned corned beef
1 medium red onion, sliced
2 cloves garlic, minced
2 red chilli padi (adjust according to preference)
2 green chilli padi
2 tsp oyster sauce
2 tbsp oil
1 tbsp unsalted butter
directions
heat oil in a pan. sauté onion and garlic and onions turn translucent.
sprinkle in the chillies and sauté for another minute.
combine the corned beef into the pan followed by oyster sauce. break up the meat and stir-fry the mixture, tossing it well. remove form the pan and set aside.
In a clean pan on medium heat, melt the butter until it sizzles. place the meat onto the pan and press down the meat into. thin layer.
let the bottom of the corned beef crisp up. once it turns crispy and golden on the underside, flip the meat to a plate with rice / bread.
serve with a fried egg an sliced cucumber.
