Corned Beef Fried Rice
(serves 3-4)
1/2 red onion, minced
1 teaspoon garlic, minced
1 cup corned beef (use canned corned beef)
3 cups leftover white rice
1 raw egg, beaten
a dash of salt & sugar
splash of rice vinegar
3 eggs cooked sunny side up
3 tablespoons cooking oil
directions
heat the oil in a wide frying pan
saute the garlic and onions until fragrant, then add in the canned corned beef and fry it till its crispy
then add in the beaten egg, and scramble it till its semi cooked
add in the leftover rice and stir fry
season it to taste (with salt, sugar and vinegar), and saute for another minute, and set aside
re-oil the pan and crack 3 eggs to cook your sunny side up
serve, share and enjoy!
