BHC-inspired Bburinkle Chicken

the signature feature of th Bburinkle chicken is its rich and tasty cheese coating powder which coats your lips with every bite. the yogurt sauce acts as a tangy-sweet complement which makes eating this so enjoyable!
BHC-inspired Bburinkle Chicken
2 chicken legs, cut into halves
oil, for deep-frying
ice cold water, as needed
chicken coating flour:
200g all-purpose flour
100g potato starch
2 tsp garlic powder
2 tsp onion powder
1 tsp paprika
2 tsp baking powder
1 tsp ground white pepper
bburinkle cheese powder:
50g cheese seasoning powder
2 tsp milk powder
1 tsp onion powder (optional)
1 tsp dried parsley
bburinkle dipping sauce:
1/2 cup yogurt
2 tbsp honey mustard
1 tbsp mayonnaise
Directions
in a bowl, combine the ingredients for the chicken coating flour and whisk well. divide the mix into 2 portions - one will be for the batter and one for the dry coating. place the dry coating into a ziplock bag.
for the portion for the batter, whisk in just enough ice-cold water until it forms a thick batter. toss in the chicken in the water to coat evenly. let the chicken marinade for about 20 minutes.
heat up a pot of oil to medium heat. one bye one, place the battered chickens into the bag with the dry coating and shake vigorously to coat the entire surface of the chicken piece. fry until the crust turns golden and crispy and the chicken is perfectly cooked on the inside. remove from oil and strain onto a kitchen towel.
separately, whisk the cheese powder and dipping sauce ingredients. once the chicken is cooked, place the cheese powder onto a plate and toss the chickens in it to coat well.
serve alongside the bburinkle dipping sauce.
